Marvelous Meatless Mondays

*Posting on Sunday to give you time to acquire the ingredients.

Breakfast: French Toast Stuffed With Apples, Godiva chocolate truffle coffee, Get Up And Mango Juice
Recipe:




French Toast Stuffed With Apples


Ingredients



•1 cup packed brown sugar


•1/2 cup butter, cubed


•2 tablespoons light corn syrup


•1 cup chopped pecans


•12 slices Italian bread (1/2 inch thick)


•2 large tart apples, peeled and thinly sliced


•6 eggs


•1-1/2 cups milk


•1-1/2 teaspoons ground cinnamon


•1 teaspoon vanilla extract


•1/4 teaspoon salt


•1/4 teaspoon ground nutmeg


CARAMEL SAUCE:

1/2 cup packed brown sugar


•1/4 cup butter, cubed


•1 tablespoon light corn syrup


Directions


•In a small saucepan, combine the brown sugar, butter and corn syrup; cook and stir over medium heat until thickened. Pour into a greased 13-in. x 9-in. baking dish; top with half of the pecans, a single layer of bread and remaining pecans. Arrange apples and remaining bread over the top.


•In a large bowl, whisk the eggs, milk, cinnamon, vanilla, salt and nutmeg. Pour over bread. Cover and refrigerate overnight.


•Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 35-40 minutes or until lightly browned.


•In a small saucepan, combine the sauce ingredients. Cook and stir over medium heat until thickened. Serve with French toast. Yield: 6 servings.


Get Up And Mango Juice

Start with 8 oz peach juice. Then add 2 scoops of frozen yogurt. Next add 2 scoop of frozen mangoes. Then two scoops of frozen peaches. Then add 2 scoops of crushed ice. Blend until desired consistency.

Lunch:   Vegetarian BLT  

Recipe:

Toast your favorite bread depending on how many you wish to serve and how many layers you wish to have the sandwich.
sautee several slices of vegetarian bacon until crisp.
break off several leaves of your favorite lettuce(I prefer romaine)
Spread toast with you favorite brand of mayonaisse, and assemble sandwich.  You may add avacado slices or replace vegetarian bacon with a smokey flavored cheese.


Aunt Ree's Lemonade
Recipe:

5 lemons


5 limes


5 oranges


3 quart water


1 1/2 - 2 cups sugar


Squeeze the juice from 4 of the lemons, limes and oranges; pour into a gallon container. Thinly slice the remaining fruit and set aside for garnish. Add water and sugar to juices; mix well. Store in the refrigerator. Serve on ice with fruit slices.


Dinner:  Hearty Vegetarian Lasagna Recipe:

Ingredients



1 (16 ounce) package lasagna noodles


1 pound fresh mushrooms, sliced


3/4 cup chopped green bell pepper


3/4 cup chopped onion


3 cloves garlic, minced


2 tablespoons vegetable oil


2 (26 ounce) jars pasta sauce


1 teaspoon dried basil


1 (15 ounce) container part-skim ricotta cheese


4 cups shredded mozzarella cheese


2 eggs


1/2 cup grated Parmesan cheese


Directions


1.Cook the lasagna noodles in a large pot of boiling water for 10 minutes, or until al dente. Rinse with cold water, and drain.


2.In a large saucepan, cook and stir mushrooms, green peppers, onion, and garlic in oil. Stir in pasta sauce and basil; bring to a boil. Reduce heat, and simmer 15 minutes.


3.Mix together ricotta, 2 cups mozzarella cheese, and eggs.


4.Preheat oven to 350 degrees F (175 degrees C). Spread 1 cup tomato sauce into the bottom of a greased 9x13 inch baking dish. Layer 1/2 each, lasagna noodles, ricotta mix, sauce, and Parmesan cheese. Repeat layering, and top with remaining 2 cups mozzarella cheese.


5.Bake, uncovered, for 40 minutes. Let stand 15 minutes before serving.




Garlic Bread




Caeser Salad No Anchovies:  Recipe:         Two heads of Romaine Lettuce chopped into 1- 1 1/2 inch pieces, your favorite croutons, fresh grated parmesan cheese (refridgerator section of grocery store)

Recipe for dressing with no anchovies:

Combine and process in food processor until thoroughly blended:


- 3 garlic cloves


- 3/4 - 1 cup mayonnaise


- 1+ tsp dijon mustard


- 1/2 tsp English mustard (dry powder)


- 2 1/2 - 3 tbs red wine vinegar


- 2 tsp worcestershire sauce


- 1/2 - 3/4 cup freshly grated parmesan cheese


- salt and pepper to taste
Then add to the mixture in a thin stream while continuing to process:


1/4 cup light olive oil


Process until mixture is emulsified.


Drink: Non-Alcohol Aperol Spritz

The Spritz cocktail(alcohol version) is drunk all day in Italy in their caffe shops, ostari, and in bakeries. Because this drink is low in alcohol, it is a great way to start your meal, as it is a digestive drink that whets the appetite. In the Venice, it is simply called a “spreetz.”

  George Washington Pie






Dessert: In honor of President George Washington on President's Day  George Washington Pie: Recipe: 


1 Graham Cracker Pie Crust
1-8ox. pkg cream cheese
1 -12 Oz Tub Cool Whip
1/2 C Sugar
1 jar of cherry pie filling


Beat cream cheese and cool whip with sugar until smooth and creamy.  Spoon into the pie crust.  Top with Cherry Pie Filling allow to set in fridge for half hour.
