Diane's Delightfully Rich Spinach Squares




1- 9 oz. bag of fresh spinach cooked until tender, drain
1- 8 oz. bag of shredded cheddar cheese
1- 6 oz. box of stuffing such as Stove Top whatever flavor you prefer
1/2 C. melted butter
1 2/3 C of hot water
1 teaspoon of minced garlic
4 beaten eggs

Spray a 9x11 baking dish with canola or olive oil.

Stir all ingredients together and pour into the 9X11 baking dish.


Bake for 25-30 minutes at 350 degrees.

Cool slightly and cut into squares, serve as an appetizer or a side dish.

Zucchini Parmesan

 I peeled two medium zucchini and sliced them thinly as seen above,  dredged in egg and bread crumbs, sprayed a cookie sheet and baked in a 350 oven for 20 minutes until golden as in the photo.
 Use your favorite recipe for marinara sauce.

 I poured thin layer of sauce in the baking dish,  then placed the zucchini strips to cover the baking dish, covered the strips with five slices of Mozzarella and added another layer of the zucchini strips more sauce and five more slices of Mozzarella. I garnished with fresh basil.
