Walp's Wednesday~Potato Pancakes


Walp's PA Dutch Restaurant sat on the corner of Union Boulevard and Airport Road in Allentown from 1936, until November 29, 1998. To those who frequented or just stopped by on their route to other places they were famous for their delicious PA Dutch cuisine. Potato Pancakes

2 eggs

3 medium size raw potatoes


2 tbsps flour


1/2 tsp baking powder


1/2 tbsp sugar


1 tsp salt
pinch of ground white pepper

1/2 tbsp parsley, minced


1/4 small onion, minced


Beat eggs. Stir in grated potatoes, and a mixture of flour, baking powder, sugar, salt, white pepper, and parsley. Add minced onions, mix well.
Spoon about 2 tablespoons of the batter for each pancake into 1/2 inch of hot shortening in a 350 degree skillet. Brown both sides. Drain on absorbent paper towels. Serve hot with applesauce.*
