Chocolate Zucchini Cake
1 cup oil
1 teaspoons vanilla
2 cups coarsely shredded zucchini (from about 1 pound of zucchini)
3 cups regular all-purpose flour, unsifted
1/2 cup natural, unsweetened cocoa
1 1/2 teaspoons baking powder
1 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
Beat together oil, eggs, vanilla, sugar and zucchini
On low speed, Add flour, cocoa, baking powder, baking soda, cinnamon and salt.
Beat a few minutes on high after all dry ingredients have incorporated with wet ingredients.
Bake 45-50 minutes at 350 Degrees F.
