Diane's Banana Pineapple Cake


Ingredients


  • 3 cups all-purpose flour
  • 1 2/3 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 heaping teaspoon ground cinnamon
  • 3 eggs
  • 1/2 cups canola oil
  • 2 teaspoons vanilla extract
  • 1 cup fresh crushed pineapple
  • 4 overly ripe bananas that I saved in freezer & thawed
Prepare Pan: Cooking spray the pan and flour it. 

I first beat bananas, pineapple, vanilla, oil, eggs, and sugar together with mixer then added flour, salt, b.soda, b. powder, cinnamon to that and blended it all together. I poured it into a prepared spring form pan but you can use any cake pan you wish to use. Bake at 350 approx 50 minutes check to make sure a tooth pic or knife comes out clean. 

We chose to eat it plain because of Roger's issues with eating too much sugar. But it would be extra tasty with cream cheese frosting.

Cream Cheese Frosting

In a large bowl, beat together the 1/2 cup butter and 1/2 cup cream cheese with an electric mixer. With the mixer on low speed, add two cups powdered sugar a cup at a time until smooth and creamy. Beat in one teaspoon of vanilla extract.
